This weekend Meatopia will treat London’s carnivores to a festival of ethically sourced meat, butchery demos and informal workshops by award-winning chefs (from £23.85, meatopia.co.uk). So get down to Tobacco Dock to sample dishes by culinary idols from around the world. Here are five of the best.

Mackerel and pickled vegetables

Barbecues don’t have to mean red meat. Michelin-starred chef Nathan Outlaw, whose restaurant in Cornwall was recently named the best in the UK, is serving grilled mackerel with pickled vegetables and jalapeño mayonnaise.

Highland cow

For a Mexican dish, try the whole pit- cooked Highland cow by Breddos Tacos’s Nud Dudhia. It’s served with with pickled habanero, lemon onions, black mole, kelp crema and house salsas.

Beef flatbread

Succulent Trenchmore beef from a West Sussex farm with smoked nose-to-tail ragu and burnt leeks on flatbread from Brighton chef Tom Griffiths.

Celeriac with grilled cabbage

Proving veg isn’t just a sideshow, Yotam Ottolenghi will be serving slow-cooked celeriac on grilled cabbage with barbecue sauce, goat’s cheese, pickled chilli and fried capers.

Torloisk three-way beef

Chefs Niall Davidson and Iain Mackay will be down from Scotland with their Torloisk Highland three-way beef with dripping toast and beer sauce. Phwoar.
