Pied á Terre manager to launch Loire Valley restaurant Noizé on former Dabbous site

The former manager and co-owner of Charlotte Street’s Michelin-starred Pied á Terre has purchased the nearby site recently vacated by Dabbous in order to launch his first solo restaurant.

Mathieu Germond, who was at the forward-thinking French restaurant for 14 years, will transform the Whitfield Street property into Noizé — a restaurant inspired by France’s Loire Valley.

The restaurant takes the name from the Loire village where he grew up, and will focus on simple, seasonal ingredients. It will be rustic in style and aims to be both relaxed and convivial.

The kitchen will be led by head chef Ed Dutton, who worked at both Pied á Terre and the Pied Nus pop-up with Germond, while Pied á Terre owner David Moore is also on board as an adviser.

Davis Coffer Lyons, which acted for the vendor Ollie Dabbous on the sale, noted that the site’s lease secured a six figure premium and includes both the ground floor and basement.

Ollie Dabbous and Oskar Kinberg announced the imminent closure of Dabbous earlier this year, and revealed they would be focusing their efforts on a new and bigger project due to launch in 2018. No more details of this are currently known.
