He lives in Roydon, Essex, with his wife Elaine and three daughters, Ellie, eight, Jaime, 23, and Lois, 27.

Ray grew up in the East End and remembers his grandfather preparing 'fantastic comfort food.

I loved pork chops with kidneys, French fries and peas.' Nowadays, he loves any type of seafood, especially oysters - although 'a bad one can put you out of action and I'd rather use a Frank Sinatra ballad to get in the mood for love'.

He's adventurous when it comes to food and has tried bear, snake and crocodile. In Iceland he tucked into the local delicacy - shots of rotten shark .esh fermented in cow's urine. 'That was too far even for me.' He tries to stay .t whenever work permits but admits, 'If it hurts, I don't do it.'

Who would join you for a sofa supper?
My wife and daughters. I'm lucky the girls all still live at home.
What would you eat?
Either an Indian takeaway - king prawn dansak with lentils - or a meat stew.
What's for pudding?
Treacle toffee pudding with custard.
And to drink?
Vodka citrus with Coke and loads of ice. The glass has to be put in the freezer first so it frosts, then add the ice, vodka and Coca-Cola.
What's on the television?
If West Ham are playing, definitely the football, otherwise a film. Last night I watched 633 Squadron; it was terrific.
What are your favourite places to eat around the world?
Smith's Brasserie in Ongar, Essex. A restaurant with great food, old-style friendly service and tasty, fresh fish. I always have the skate wing. Garden of India in Harlow is a great Indian restaurant. It's really fantastic with lots of atmosphere and serves delicious lamb or lobster curry. The restaurant at the Four Seasons in the Maldives - paradise, baby. The Dorchester Grill does the best Sunday dinner with an old-school atmosphere and a mix of well-to-do and workingclass guests. The people in charge are as good as gold and Jason the wine waiter is a diamond.
